Parsley (Petroselinum crispum)
Parsley is more than that decorative green sprig on your plate.
It is rich in many important nutrients, including vitamin A, C,
and K, folate, and iron—all important skin nutrients. Vitamin
A and other carotenoids are known for cellular regeneration,
cellular communication, and wrinkle reduction. Vitamin C
is necessary for collagen production and vitamin K is used
to reduce dark circles under the eyes. Flavonoids in parsley
can target various pathways to decrease inflammation.

Using
anti-inflammatories on the skin is important, as inflammation
is related to many common skin issues, such as redness,
dermatitis (eczema), rosacea, and psoriasis. Most importantly,
a flavonoid called apigenin has been shown to improve the
barrier function of skin, which helps prevent water loss from
the skin.
